Lemon Rice is a tangy, flavorful South Indian dish made with fluffy rice, fresh lemon juice, and aromatic spices. This quick and easy recipe is perfect as a light meal or a side dish for any occasion!

Ingredients

  • 1 cup long grain rice
  • 1 1/3 cups vegetable stock
  • 1 tablespoon unsalted butter or olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 3 cloves garlic, minced
  • 1/4 teaspoon chopped ginger
  • 2 teaspoons chopped fresh cilantro, for garnish

Instructions

  • Rinse the rice under cold water until the water runs clear, then drain it.
  • Take a saucepan and heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic and ginger. Cook for another minute or until they turn slightly golden.
  • Add cumin, turmeric, and salt. Stir in the rinsed rice until it’s nicely coated with the spices.
  • Pour in the vegetable broth or water, along with the lemon juice, and bring it to a boil. Then reduce the heat to low. Cover and let it simmer for 15-18 minutes until the rice is cooked and the liquid is absorbed.
  • Remove from heat, and let it sit covered for 5 minutes. Fluff the rice with a fork and adjust the seasoning if needed.
  • Top with chopped fresh herbs and toasted nuts if desired. Enjoy your lemon rice with sautéed veggies!
