I’m totally obsessed with homemade cottage cheese, but honestly, I was ready to try something new besides my usual cottage cheese scramble (which my mom always makes with the leftovers!).

Since it’s no-bake, there’s no fussing with raw eggs or messy baking, and the cottage cheese adds this amazing creamy texture while packing in extra nutrients.

You can dig right in with a spoon, top it on fruit or yogurt, or even spread it on toast for a fun twist.

Ingredients

  • Cottage cheese: The star of the recipe and the base of this dough, cottage cheese gives it a creamy texture and packs a protein punch. I highly recommend using full-fat cottage cheese for this recipe, but if you grab low-fat instead, it’ll still turn out great.

  • Peanut butter: Peanut butter brings a rich, nutty taste and a bit of healthy fat for extra creaminess.

  • Maple syrup: I didn’t use refined sugar to keep this recipe healthy! Maple syrup naturally sweetens the cookie dough without any refined sugar.
  • Vanilla extract: It gives the dough that classic cookie dough vibe.
  • A pinch of salt: Just enough to balance the sweetness.
  • Chocolate chips: cookie dough is simply incomplete without chocolate chips! I use low-sugar dark chocolate chips for this recipe. 

How to Make Cottage Cheese Cookie Dough

Blend: Add the cottage cheese, maple syrup, and vanilla essence to your food processor or high-speed blender, and blend until completely smooth.

Mix in the rest of the ingredients: In a medium bowl, combine the blended mixture with almond flour, peanut butter, chocolate protein powder, and salt. Stir until all the ingredients are well incorporated.

Fold in the chocolate chips gently to keep them intact. Serve immediately and enjoy your high-protein cookie dough!

Chill (optional): If you prefer a firmer consistency, refrigerate the dough for 15-20 minutes before serving.
