But if you’re anything like me, you might want to skip the deep fryer and opt for something a bit lighter. Enter the air fryer! This little kitchen gadget has been a game-changer, giving us that perfect crunch without the extra oil. Today, I’m sharing my go-to recipe for air fryer potato wedges that’ll have you coming back for seconds (or thirds, I won’t judge!).

Plus, they’re a great budget-friendly side dish option for last-minute air fryer recipes, just like air fryer roasted potatoes or baby potatoes.

How to Make Air Fryer Potato Wedges

Ready to make some crispy, golden potato wedges? First, gather all the ingredients you’ll need for this easy recipe.

Ingredients You’ll Need

  • Russet potatoes: I prefer russets over Yukon gold potatoes for wedges since they have high starch content. 
  • Olive oil: Or any oil of your choice
  • Salt and black pepper: To season.
  • Spices: I used garlic powder and smoked paprika for added flavor. Or you can also use some homemade seasonings like cajun seasoning, or homemade taco seasoning.

Direction 

  • Prep the Potatoes: Wash and slice the potatoes into wedges using a sharp knife and a non-slip cutting board. If you have extra time, soak the wedges in cold water.
  • Season: Pat the wedges dry and toss them with olive oil, sea salt, black pepper, garlic powder, and smoked paprika until evenly coated. You can also use your preferred homemade seasonings. Fresh minced garlic is optional but adds a slight garlicky punch to every bite.
  • Air Fry: Preheat the air fryer. Arrange the potato wedges in a single layer in the basket. Air fry for 10 to 12 minutes, shaking the basket halfway through, until golden and crispy.
  • Serve: Enjoy the wedges hot, with your favorite dipping sauce or as a side dish.

Here’s a quick guide:

  • Making Ahead: You can season and cut your potato wedges in advance. For a bit of extra convenience, you might want to par-cook them in the air fryer at 375°F (190°C) for about 10 minutes. Just let them cool before storing them.
  • Storage: Keep your cooked air fryer potato wedges in an airtight container in the fridge for about 3-4 days.
    If you’re planning to store them for longer, freeze them after they’ve cooled completely. They’ll stay good in the freezer for up to 3 months.
  • Reheating (From the Fridge): When you’re ready to eat, pop them into the air fryer at 375°F (190°C) for 5-8 minutes. Give the basket a shake halfway through to get them crispy all over.
  • Reheating (From the Freezer): No need to thaw—just air fry the frozen wedges at 375°F (190°C) for 10-12 minutes. Shake them halfway through to ensure they heat up evenly.

  • 1 teaspoon garlic powder
  • ¼  teaspoon salt
  • ¼ teaspoon black pepper 
  • ½ teaspoon smoked paprika
  • ½ teaspoon minced garlic (optional)
  • ½ teaspoon parsley (to garnish)

Instructions

  • Prep the Potatoes: Scrub the potatoes thoroughly and cut them into wedges. A good rule of thumb is to cut each potato in half lengthwise, then cut each half into 3-4 wedges, depending on the size of the potato. Try to cut them into even sizes to ensure uniform cooking.
    Soak the potato wedges in a large bowl filled with cold water for about 15 to 20 minutes. This step helps remove excess starch and makes them crispier.
  • Season the Wedges: In a large bowl, toss the potato wedges with olive oil, ensuring each wedge is well coated. Sprinkle in the garlic powder, smoked paprika, salt, pepper, and any herbs you're using. Mix everything together until the wedges are evenly seasoned.
  • Air Fry the Potato Wedges: Preheat your air fryer to 400°F (200°C) for 2 to 3 minutes. Arrange the potato wedges in a single layer in the air fryer basket. Cook the wedges for 15-20 minutes, shaking the basket halfway through to ensure even cooking. The wedges should be golden brown and crispy when done.
