Ingredients For Beet Soup

This soup might look fancy, but don’t worry, it’s super easy to make. You’ll just need a few basic ingredients, and it takes only a few minutes to cook. Here’s what you’ll need to make the best beet soup:

  • Beets: These colorful veggies aren’t just pretty; they’re also good for your heart and packed with vitamins.
  • Potatoes: They make the soup creamy. You can also use parsnip if you want to make low-calorie vegetarian soup.
  • Ginger: It adds warmth and a hint of lively zest to every sip.
  • Garlic & Onions: These give the soup a delicious, rich taste.
  • Vegetable Broth: You can make the soup thick or thin depending on your preference.
  • Salt and Pepper: Just a sprinkle of these makes it taste even better.

How to Make Beet Soup

  • Start by peeling and chopping the beets into small cubes; this will help them cook faster.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, ginger, and minced garlic, and sauté until the onion becomes translucent, which should take about 5 minutes.

  • Add the chopped beets, and potatoes along with a pinch of salt and pepper, to the pot. Stir them, and cook for an additional 5 minutes, allowing the beets and potatoes to soften slightly and absorb the flavors.

  • Pour in the vegetable broth, making sure it covers the beets. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for approximately 15 to 18 minutes, or until the beets are tender.

  • Once the beets have softened, use an immersion blender to puree the soup until it’s smooth. Alternatively, you can use a high-speed blender to achieve the same smooth consistency.

  • If needed, return the blended soup to the pot and adjust the seasoning according to your taste.

Serve your homemade beet soup hot or refrigerate it for a refreshing cold soup option on hot summer days.
